The hand-harvested grapes were transported directly to the winery, where they were crushed and drained to tank. The juice was chilled, settled and transferred with a small proportion of grape solids to seasoned small and larger French oak barrels for spontaneous fermentation, followed by maturation on yeast lees for 10 months before finishing and bottling in early 2020.
Appearance: Brilliant pale lemon colour.
Nose: Fresh, juicy white-peach and apricot aromas, with hints of spring blossom and savoury almond lees.
Palate: Smooth and sleek on entry, with ripe stone-fruit flavours, generous fruit sweetness and balancing acidity. A fresh and richly textured, well defined mid-palate leads to a long, complex finish.Summary: This is a sleek, relatively fine style of Viognier, more reminiscent of French examples than the riper styles generally produced in Australia. Its harmonious fruit and fine texture are crafted to complement food in the European tradition.
