The grapes were hand-harvested at optimum ripeness and transported directly to the winery, where they were whole-bunch pressed to tank. The juice was chilled, lightly settled and racked to small French oak barrels, 20% new, for fermentation by indigenous and selected Burgundy yeast strains, followed by maturation on yeast lees in 225- and 800-litre barrels for 10 months before finishing and bottling in early 2020.
Appearance: Brilliant pale lemon in colour.
Nose: Complex fruit aromas of green apple, honeydew melon and grapefruit are complemented by subtle vanilla oak, creaminess from yeast lees contact and chalky/mineral undertones.
Palate: Finely structured and medium-bodied, this wine displays excellent flavour complexity and a harmonious balance between subtle fruit, mineral elements and fresh acidity.Summary: Chardonnay is the mainstay of the Tallarook white wines, and the 2019 continues the pedigree of fine, stylish and complex Chardonnays consistently produced by our vineyard.
